3 ounces cream cheese, softened
1 cup sugar
2 tsp real vanilla
1 large egg beaten
2 cups all purpose flour
1 tsp baking soda
1 tsp Kosher salt
1/2 cup sour cream
1 large can crushed pineapple (20 oz), well drained
1/2 cup nuts (optional)
Beat togehter softened cream cheese with sugar, add egg and vanilla, add sour cream and beat just until smooth.
Sift dry ingredients together in a separate bowl, then fold into cream cheese mixture.
Lastly, fold in drained pineapple.
Bake in preheated 350 degree oven for approx 25 - 30 minutes.
Best of all, this recipe freezes well for future use.
